Mashing the chick peas first helps to smooth out the texture of the hummus so it is totally smooth :)

My recipe doesn't include the mint or yogurt, but I'm planning on trying that. I add everything else, but I don't mash the chickpeas first. Could you explain why to mash the chickpeas first?

THat's true, there are people who like to add cumin and corriander to their hummus, you can always give it a try, I am giving you the basic recipe. Many people like to add many different flavorings to hummus. Make it to suit your taste buds :)

hey dedemed im english but married into family with egyptian and med background they always put cumin and often corriander in it whats your take on that

Being an arab and growing up with hummus.. I have to say I've never heard of adding mint to it, but sounds really good. You know you can also try adding roasted red peppers or even cilantro to give it a kick =] Thanx Dede |
